Delicious Walking Taco Casserole

My family thought this was really good. I did make a couple of changes – I substituted a jar of salsa for the diced tomatoes and added about 1/4 cup chopped green pepper. I mixed the taco seasoning packet and about 3/4 cup water with the beef mixture (and heated it according to the taco seasoning directions) prior to adding the soup, salsa, and pasta in order to really get the seasoning flavor into the beef. I also used shredded Mexican blend cheese, and mixed about half of the total amount of cheese I used (about 1 cup) into the beef mixture before spooning it into the casserole dish and topping with the remaining cheese. I didn’t feel the need to bake it for much longer than 10 to 15 minutes because all you really need to do at that point is melt the cheese since everything is already cooked. Finally, I added crushed tortilla chips just prior to serving to ensure they remained crispy.

My Family really liked this recipe. I do too. It’s quick, easy and tasty. I didn’t have tomato soup on hand so I substituted an 8-oz. can of tomato sauce with a little water to make up for the soup. I also added some minced garlic with the onion. I’ll be adding this to my list of favorites.

This is now one of my favorite recipes of all time! It’s delicous and was a hit with my family – including my 12 month old daughter! I HIGHLY recommend it!! – also, definitely add the sour cream, yummy!

My fiance and I are both college students, buying a house and busy packing things, and we don’t have much time to grocery shop lately! We wanted something besides frozen pizza or hot dogs, plain Mac and Cheese! But-the only things I had available to cook with were: half a box of elbow macaroni (about 8 oz) 1 lb of ground beef,1 can of tomato soup, and taco seasoning, no shredded cheese, so I improvised used a can of Frito Lay Mild Cheddar cheese chip dip, and crushed up some taco shells for the topping! My fiance loved it! Thanks for a simple easy recipe!
