Creamy Tuscan Soup

This warm and cozy Tuscan Soup is loaded with sausage, kale, and potatoes, in a creamy broth. Top it with grated Parmesan cheese  for the best bowl of soup ever.

Everyone has their variation of Olive Garden’s Zuppa Toscana and this is our family’s take. We love it so much it’s one of our go-to dinners whenever we’re craving a hearty bowl of soup.

It’s a meal in itself, but adding some focaccia breadsticks for dunking is a side dish I highly recommend. Just like the restaurant, except at home!

Recipe Notes

This is a quick 30-minute soup recipe, which makes me a happy mom. It’s easier and faster than herding the family into the car to go out for dinner!

We love it with extra spice so I use spicy Italian sausage and I add some red pepper flakes for even more heat. If you prefer things on the mild side, use regular Italian sausage and skip the red pepper. It will still be delicious.

Not everyone is a fan of kale, but in this soup it’s delicious. It cooks down so it’s tender and delicious!

Don’t forget the cheese – a generous amount of Parmesan cheese simmers in the soup giving the broth some body, and we sprinkle a lot over the top for serving. It’s not to be missed.

Ingredients:

Chopped red onion
Chopped yellow onion
Olive oil
Minced garlic cloves
Chicken broth
Peeled and diced red potatoes
Roughly chopped kale
Hot Italian sausage
Heavy whipping cream
Grated Parmesan cheese or Asiago cheese
Salt and white pepper

How do you make Creamy Tuscan Soup?

In large heavy bottomed pan heat olive oil, add sausage, onions, and garlic and cook until sausage is completely cooked and onions are tender.

Add broth and potatoes and simmer for 15 minutes over medium heat.
