Ingredients
½ cup coconut oil softened
½ cup brown sugar lightly packed
1 tsp vanilla extract
1 egg
1 cup all purpose flour can use 1/2 whole wheat flour
¼ tsp salt
1 cup old fashioned oats not quick oats
1 cup raspberry jam or raspberry preserves
¼ walnuts chopped, optional
Instructions
Prep
Heat oven to 350°F. Line 8-inch square pan with parchment paper. Set aside.
Assemble
Next, in a large mixing bowl, add the softened coconut oil, egg, brown sugar, salt and vanilla extract. Stir to combine.
Then, add in flour and oats. Stir until a thick dough is formed.
If you have chosen to add nuts to the mix, add those in and combine into mixture.
Proceed to press ⅔ of this mixture down into the parchment lined pan. Use your fingers to press and spread down into one even layer.
After that, top with the raspberry jam and spread into one even layer across the crust.
Then, drop the remaining ⅓ crumbly oat mixture into clumps on top of the raspberry layer.
Bake
Put the pan in the oven and bake for 35-40 minutes or until the edges are golden.
Remove from oven & allow bars to cool at room temperature before carefully slicing and serving! Enjoy!
