HALLOWEEN COOKIE DESSERT PIZZA

Halloween Peanut Butter Cookie Pizza is a favorite treat around our house, and not just at Halloween, although the colors work perfectly for this holiday in particular. This recipe is super easy to adapt to personal tastes, holidays, etc. so feel free to swap out the Reese’s Pieces for holiday M&Ms or even just plain chocolate chips and of course you could use any color/kind of drizzle you’d like!

I started with a peanut butter cookie crust using my absolutely favorite Peanut Butter Cookie recipe ever. I swapped out the chocolate chips in that recipe for Reese’s pieces because there is no such thing as too much peanut butter and I wanted the festive fall colors!

This recipe makes perfect cookies every single time (and trust me, I’ve made them dozens of times!), but I was a little nervous that one big cookie wouldn’t bake quite as well. I couldn’t believe how well the cookie turned out! Even when baked as one large cookie, this recipe still yielded a perfect, soft consistency and baked evenly. Plus, it is so much easier and faster than making individual cookies and waiting for multiple batches to bake!

INGREDIENTS IN HALLOWEEN PEANUT BUTTER COOKIE PIZZA:

Peanut butter: For best results, use a regular peanut butter. Every time I have made these cookies I have used a regular creamy peanut butter (like Jif or a store-brand alternative). Several readers have commented that the cookies do not turn out as well when using a natural style peanut butter.

Butter: I use salted butter, but you can use unsalted if you prefer. No margarine! Make sure the butter is softened to room temperature, but not melted before adding to the recipe.

Sugar: Can’t leave this one out – kind of an important ingredient in cookies!

Brown sugar: Also an important cookie ingredient. Make sure your brown sugar isn’t dried out or stale.

Egg: We only need 1 large egg, but it helps to bind the dough together so that the cookies cook properly and don’t crumble.

Milk: Just a little bit of milk, but it is needed to add a bit of moisture to the cookie dough. Any type of milk will work just fine!

Vanilla: I suggest using a good quality vanilla extract or a Vanilla Bean Paste.

Flour: I usually use all purpose flour, but you can use bread flour, or even pastry flour in this recipe.

Baking powder: Leavening agent in the cookies. Make sure your baking powder isn’t old or expired for best results.

Salt: Just a little bit, but don’t leave it out!

Reese’s Pieces: The recipe calls for 1-2 cups of Reese’s Pieces. It’s definitely usually closer to 2 cups in my house. Maybe even a little bit more.

Miniature marshmallows: You will need 1-2 cups of mini marshmallows to sprinkle over the top of the pizza before baking.

Caramel topping: A little bit of caramel ice cream topping drizzled over the pizza is absolutely incredible.

CHOCOLATE DRIZZLE

Semi-sweet chocolate chips: You only need 1/4 cup of chocolate chips to make the drizzle for the top of the pizza.

Shortening: Just a teaspoon of shortening will help to thin out the chocolate to the perfect drizzle consistency.

ORANGE DRIZZLE

Powdered sugar: You only need 1/2 cup of powdered sugar for the orange drizzle.

Water or milk: Just a tablespoon of water or milk will mix together with the powdered sugar to create a simple frosting to drizzle over the pizza.

Food coloring: To make the drizzle orange, you’ll need 3 crops of yellow and 2 drops of red food coloring.
