Egg Stuffed Baked Potato

TOP Reviews:

this was great! added sour cream, green onions and cheddar cheese to mix. used cut up soy sausage patties. poached eggs for the top, instead of baking them. had potato mixture leftover that added to another meal. will make again

I smashed up the hot potato insides with a little cream cheese, jack cheese and milk. I also used sausage and it turned out delicious!

I doubled the parmesan, added a couple of dollops of light sour cream, and added a pinch of salt to the potatoes. Both my wife and I really liked the flavor of this recipe, but we both agreed that it would turn out much better to make the wells and rebake the potatoes, but poach the eggs separately.

Microwaving the potatoes saves a lot of time. I also put some extra potato mixture in ramekins and they turned out great.

I liked this recipe a lot. We always microwave potatoes for about 5 minutes then bake till done, saves time. My spouse doesn’t like runny eggs, so I microwaved his potato for a minute as the eggs were setting so his was firm. Used veggie sausage as well, added cheddar cheese and a bit of milk. I really liked it as did my husband and I will make it again.

We loved it! I used three potatoes and cooked them in microwave for 10 minutes, then 30 minutes in oven. I also poached the eggs in the microwave. Some of us added sour cream. I might add green chiles next time. Kids thought all was delicious, too!
